A farm, and a lot of kitchens
Regulars was started by Michael Kaufmann, who also runs Casa Verde Microfarm, a small farm in Vaudreuil-Dorion that grows microgreens and edible flowers for restaurants around Montréal. Delivering into dozens of kitchens, week after week, teaches you one thing: the people who come back are the whole business, and almost nobody has a good way to know them at the door.
Reservation apps know a guest if they booked. In most of the rooms where people are actually regulars, nobody books. They just walk in. Regulars exists for that moment.
The other half is a free, bilingual guide to Montréal’s dining rooms, written by walking the city. Nobody pays to be in it, and nobody can.
